Sunset Farm Oil and Vinegar Dressing

This dressing is easy to prepare and has a light taste that lets the greens speak for themselves. The proportions of ingredients are to be adjusted to your taste. The most important ingredient is the Marukan Gourmet Seasoned Rice Vinegar

Procedure

Add oregano, garlic powder and sea salt to water then mix thoroughly.

Add rest of ingredients then mix thorougly.

Adjust tartness with sugar or vinegar as required.

Tips

The Marukan Seasoned Gourmet Vinegar is a key ingredient to this dressing and brings a great deal to the mix. Using other vinegars will work but they tend to be more sour and do not have the seasonings.

Purchase the Marukan Seasoned Gourmet Rice Vinegar at an asian grocery. It contains a little sugar and salt is reduced to 4.1 acidity with water. I've also purchased it at the supermarket. It seems to be readily available.

You will need to adjust the seasoning to your taste, especially the vinegar vs sugar ratio. If the dressing seems not bright enough, try adding more salt. Also adding some pepper and more garlic powder might improve the flavors. Adding other types of fresh herbs will also enhance the dressing.

I sometimes grate a few tablespoons of fresh parmesan, romano or pecorino cheese into the dressing then put it in the blender.
