Frederico's Spanish Style Bone-in Country Ribs

large honey sweet or vidalia onions sliced.

dry sherry or 1/2 cup white wine

Water for the seasoning, Perhaps a bit less than suggested due to the addition of the onions, celery and wine.

Brine the ribs in salt and sugar solution overnight.
|

Put 1/2 the sweet onions on a layer in the bottom of the crockpot.
|

Remove as much fat from the ribs as possible, or cook the day before and defat after cooling in the fridge overnight.

Brown the ribs on all sides in the broiler in the oven. Can also be browned in oil in a saute pan.

Lay the ribs on top of the onions.

Put the remaining half of the onions on top of the ribs.

Put the celery on top and around the ribs.

Mix the taco seasoning, water and sherry in a separate bowl.

Gently pour the seasoning mix over the ribs and veggies.

Cook for 8 hours on low.

Remove the chops and keep warm and covered in a 180° oven.

Use a stick blender to blend the veggies and sauce.

Serve over rice, corn chips, corn, etc.

Author Notes
This easy, crockpot recipe could be enhanced with corn chips or frozen corn on the side. Hot peppers and cheese over the corn chips or salsa and sour cream. Adding some cayenne to the spice mix will also change the flavors. A taco-style salad with corn chips, lettuce tomatoes, sour cream, onions and taco sauce would be a perfect side dish.
