Foil-steamed Salmon

Ingredients

lb

Skinless Salmon Filets

1/2

onion, sliced very thin or coarsely chopped

4

oz

shitake mushrooms, sliced

1

tbsp

butter - cut into small pieces

4

oz

snow peas, ends trimmed

4

green onions

2

tbsp

chopped coriander leaves

Kamada Dashi Soy to season after foil packet is opened, just before serving.

Foil for wrappiing packets

Procedure

Preheat oven to 350° F

Prepare Packet

Cut or combine foil for packets

Rub a little butter on the foil where the salmon filets will sit

Layer Packet Ingredients

Ttrim salmon to desired size

Place a layer of onions as a foundation in each packet.

Next layer: snow peas, then salmon on top.

Now place the sliced Shitake mushrooms carefully on top of the salmon.

Sprinkle the chopped coriander leaves on top and place evenly spaced pats of butter to finish.

Carefully close packet so all ingredients remain stacked. Do this so you can open the top of the packet without losing the liquids that form after cooking. Place the packets on a flat cookie sheet or roasting pan.

Bake in the oven for 20 - 25 minutes.

Open packets and drizzle with Dashi Soy to taste.

Easy prep and cook. Excellent results. I served it with Jasmine rice. I also had good results brushing the salmon lightly with Worcestershire sauce before cooking and placing the filet on top of fresh cut corn, potatoes, zucchini and onions, with sliced portobello mushrooms and butter on top. Eliminate the dashi soy at the end. - KDF 8/3/2016
